My daughter’s birthday is coming up and I’ve been thinking about making her cake from scratch this year. I usually use one of those box mixes, but when you think about it, that’s just flour, sugar and spices, so I might as well make it myself. So far I’ve always used canned frosting, but my mother-in-law just shared her favorite vanilla frosting recipe and it sounds simple enough. So I’ll give that a try as well.

Of course my next step was to decide on a particular type of cake. I went online to look for some simple cake and frosting recipes that sounded easy to make and of course would be yummy for the little birthday girl. I found some great recipes for both chocolate and yellow cake. I let the birthday girl pick and she decided she wanted a yellow cake with pink frosting. I ended up using the vanilla frosting recipe I mentioned and used a little red food coloring to turn it pink. The cake turned out very cute and both cake and frosting were more delicious than anything I’d made from a box before. I just love it when things work out. By the way, the cake ended up being a lot cheaper too by making it from scratch.
